Simple dill pickles can enhance a variety of sandwiches or just be a delicious snack.
This recipe has a classic dill flavor with a hint of garlic and warm finish from the red pepper flakes.
If you like things spicy, I recommend adding some sliced jalapeño or habanero to the pickle jar for a little extra kick.
This recipe should allow you to yield at least two jars of pickles. We like a mixture of spears and chips, but you can slice them as you like. A mandolin works really well for long flat sandwich sliced pickles. Just watch your fingers.

Ingredients:
2 cups water
2 3/4 cups white vinegar
2/3 cups granulated sugar
4 tablespoons kosher salt
4 Cucumbers or 8 Pickle cucumbers
1 Fresh dill
3 Garlic cloves (thin sliced or minced)
2 tsp Red pepper flake or hot peppers
Instructions:
Add water, sugar, salt and vinegar to a saucepan and bring to a boil, stirring to mix.
Add pickling mix to the cucumbers and herbs in large containers.
Place in fridge for up to 2 months.
