The Perfect Homemade Breakfast Sausage

Making your own breakfast sausage from scratch is extremely easy, cost effective, and delicious.

This recipe will make about 30 patties, which can be packaged and vacuum sealed in any amount you and your family need.

If you like a little more heat to your sausage patties, you can mix in some additional chili flakes in addition to the cayenne pepper listed below.

Ingredients:
8 – 10 lb pork, Boston butt, spare rib tips or already ground
0.25 cup fresh sage, minced, half needed
0.25 cup black pepper, coarse fresh ground
0.25 cup salt, half needed
3 tbsp brown sugar
2 tsp cayenne
0.5 tsp nutmeg
2 tsp rosemary
2 tsp thyme

Instructions:

Slice pork shoulder into strips

Chill in Freezer for 1 hour

Grind with medium grinding adapter

Mix all seasoning ingredients together in a separate bowl.

Using a paddle mixer, add seasoning to the grind and blend.

Roll sausage into patties.

Patties will last 3 days in the refrigerator or 3 months in the freezer.

Add a little olive oil to a hot pan and cook the patties until no longer pink in the middle
